METHOD

Sauce
First, in a small bowl, mix together the tamarind paste, oyster sauce, fish sauce, and sugar. Set aside until ready to use.

Noodles
Place the Pad Thai noodles in a large bowl. Pour boiling hot water over them and cover the bowl with a plate. Let them sit for 4–5 minutes.

Tofu
Place a wok over high heat and add two tablespoons of oil along with the cubed tofu. Stir-fry for one minute, then add the finely chopped shallot and garlic. Cook for another 30–60 seconds.

Prawn and chicken
Add the shrimp and diced chicken breast to the pan. Stir-fry for about two minutes, until the meat is golden. Push all the ingredients to one side of the pan, and add a tablespoon of oil to the empty side. Pour in the beaten eggs and quickly scramble them. Once cooked, mix everything together.

Pad thai
Add half of the homemade sauce, stir, and cook for 30 seconds. Then add the drained noodles, bean sprouts, and the remaining sauce. Mix well and stir-fry for another minute. Finally, stir in some chopped garlic chives or spring onion for a fresh finish.

Serve
Divide the Pad Thai between two plates. Sprinkle with chopped peanuts and serve with a wedge of lime.
